Lettuce
This would be considered a summer vegetable when you grow it in your garden, but you can also grow it indoors and then it will give you a year-round supply. Lettuce is a great vegetable, especially the many new varieties that can be picked indiscriminately and still continue growing.
Potatoes
Potatoes are great to eat because they are a source of carbohydrates and they can grown for at least nine months of the year. If you keep your potatoes in a cool, dry, yet dark location you should be able to keep them in stock for most of the year.
Carrots
This is a great vegetable that you can grow the whole year, but if your area is too cold to support them during the winter then they can be blanched and frozen.
Onions
Onions are a great option for the home self-sustainable garden. They can be stored really well and are great producers.
Apple Tree
This is a great choice and source of winter fruit. The great thing about apple trees is that they produce abundant fruit. If you take care of your apple trees you can have apples for most of the year as well.
Tomatoes
You should definitely have tomatoes, because they are the best vegetables that the self-sustainable gardener can grow. They taste great during the summer months and you can easily produce enough to save them for the cooler months as well.
Beans
There are many types of beans to choose from, and you can have these growing for almost six months of the year. Beans are a great vegetable that are easily to blanch and freeze for the winter months.
