What is the difference between heirloom vs open pollination vs self pollination?


Wikipedia says, “An heirloom vegetable is a cultivar that was commonly grown during earlier periods in human history, but which is not used in modern large-scale agriculture. Many heirloom vegetables have kept their traits through open pollination…”

How can open pollination keep traits? Doesn’t it open the door to cross breading? I thought self pollinating plants like peppers kept the seeds like the parent plant.
I meant: Cross-Pollination not cross breading

If you restrict the vectors it lessens the possibility of cross breeding.
