Dairy Free Uses for Fresh Basil?
I work at a Organic Vegetable farm and yesterday I brought home three big boxes (about 5-6 bushels) of fresh basil. And I can get more on Monday too if I want.
So, I want to make pesto. Problem is that I do not have any nuts except for sunflower seeds, and with the price of Olive oil I would not want to use too much. Plus most recipes call for cheese, and I do not like that. I need a cheese free recipe that will work with sunflower seeds… or pumpkin seeds. And preferably not 1/2 cup of oil per little bit of basil.
Then, I am going to freeze some basil. Just process it with olive oil and freeze it. After that, I’m out of ideas. I need some recipes. What about salad dressings or something? What can I make that uses lots of basil?? I do have chickpeas, but no tahini… can I make a spread? Do you have any good pesto recipes that is good for freezing or canning?
Pesto-like substances are perfectly delish without cheese, or nuts for that matter!
Garlic can add a lot of flavor, and other herbs can be used as well.
I’m not sure how to get around the lack of oil, though. It is the ‘medium’ that keeps the air from oxidizing the beaten basil. You can use canola, safflower, or even pomace (the lowest grade of olive oil, selling here for about $9 a GALLON.
Dried basil will keep very nicely in airtight containers, and would make a very nice gift. See your local dollar store for some interesting bottles to keep it in.
Basil with mushrooms cooke in a little chicken broth makes a fantastic soup that just screams ‘health’!
